Ok, so I have a few catch-up things to mention about Hong Kong and China so far.

I tried congee for the first time, I was not so sure about the first bite or two, but after a few more I think I like it, and could be a good comfort food!

Here is that Tofu/Bean Curd pudding with fruit on top served on top of dry ice! Awesome!

The meals in China are served around a big lazy susan, and the servers put more food out every couple minutes until it is all full up. It is fun to just take bites from each dish here and there.
