Joel and I just visited the farmers market for the first time this summer. It was great. We got all kinds of beautiful things, it was so exciting. I decided we needed to make a little treat for desert tonight so I made up a little recipe.
Strawberry-Rhubarb Oatmeal Crumble
-1 cup chopped rhubarb
-1 cup chopped strawberries
-1/4 cup instant oatmeal
-1/8 cup flour
-2 Tbsp brown sugar, packed
-1/2 Tbsp butter
Place chopped fruit in bowl (I sprayed with Pam first). Mix the remaining ingredients together in a prep bowl and cut together. Sprinkle this mixture over the fruit. Bake at 350 for 10-15 minutes.
5.5 WW points. I topped it with some whipped topping and ate it warm. Yum! I made Joel one too and he liked it as well.
